This recipe is a healthier version of the usual chicken curry that is even more protein packed and delicious than it’s counter part. Are you read for it?? The magic ingredient is Greek Yogurt! This recipe is not a fast one, so definitely save this for a weekend and nibble on it for the rest of the week. It’s important to cook it to perfection and cook it until it dries out for the most optimal flavor. It is tangy, spicy and addicting! Now let’s get cookin!
-1 Whole chicken, cut and cleaned
-1 large onion, sliced
-3 Roma Tomatoes, chopped
-2 Serrano (or Jalapeno Peppers) thinly diced
-2 tsp of minced Garlic
-1 tsp of minced Ginger
-2 tsp of Salt
-1 tsp of Black Pepper
-2 tsp of Red Chilli Powder
-1 tsp of Smoked Paprica
-1 tsp of Cumin powder
-1 tsp of Garam Masala powder
-2 tsp of Lemon Juice
-1/2 cup of Greek Yogurt
-3 tsp of a neutral tasting oil
1). Let your whole chicken marinate with the following ingredients for a minimum of an hour: 1 large chicken, 1 tsp of minced garlic, 1 tsp of salt, 1 tsp of black pepper and 1 tsp of lemon juice.
2). In a large pan on medium high heat, cook your onions along side the oil, Serrano Peppers, Garlic, Ginger and Spices. After 5 minutes, your onions should have browned. You may add some water if your onions start sticking to the pan.
3). After browning your onion, add in your tomatoes, marinated chicken and the rest of your marinade to the pot.
4). Allow your mixture to cook through for about 15 minutes covered, stirring frequently.
5). Once your curry has turned into a cohesive sauce, add in the Greek Yogurt and take off the lid, stirring frequently. Cook this until the liquid dries up and the chicken starts to break away from the bone.
6). Garnish with Cilantro and Enjoy 🙂
