Middle Eastern Chalupa

This recipe is sooooo incredibly simple yet so delicious! I’ve always loved Chalupas from Taco Bell and wanted to recreate one that was healthier with a Middle Eastern twist! You just need your choice of protein, hummus, tziki sauce and your favorite toppings. That’s literally IT! It is healthy, delicious and soo filling. I prefer using the whole wheat pita but you could use whichever Pita Bread you prefer. You can also use store bought hummus and Tziki sauce if you prefer! Now lets get cookin!

Yeilds 4 Servings

-A packet of Whole Wheat Pita bread

Meat Mixture:

-1 pound of ground beef/ chicken

-1 diced onion

-1 tsp of salt

-1 tsp of black pepper

-1 tsp of dried Oregano

-1 tsp of chili powder

-2 tsp of minced garlic

-1 16 oz can of Garbanzo beans, rinsed and drained

-2 tsp of Tahini paste. I like this one.

-1/4 cup and 2 tsp of your favorite Olive Oil

-1 tsp of minced Garlic

-4 tsp of Lemon Juice

-1/2 tsp of Salt

-1/2 tsp of Black Pepper

-1 tsp Red Chili Powder

Tziki Sauce:

-2 cups of Greek yogurt

-1 cucumber: grated and strained

-1 tsp salt

-1 tsp black pepper

-2 tsp of lemon juice

-1 tsp of minced garlic

1) Place your ground meat, onion, minced garlic and meat mixture spices in a skillet and cook it on medium high heat stirring occasionally. Make sure to use the back of your wooden spoon to crumble the ground meat as it cooks. Mixture spices: salt, black pepper, red chili powder and oregano.

2) Assemble Hummus:

– Place all the ingredients in your food processor and blend away. You’ll want to blend this for 2 minutes to make sure it is creamy.

-Taste for seasonings and adjust to taste. I usually add more olive oil if it is too chunky and add some more lemon juice if it needs more of a zing.

3) Assemble Taziki Sauce:

-Grate a cucumber and place the grated cucumber in a towel paper and squeeze. You’ll want to squeeze out most of the water. Combine all of the sauce ingredients and refrigerate.

4) Assemble your wrap! Spread a layer of hummus on the entire pita and then spoon some ground beef on top. Then, spoon some of the Tziki sauce and top it off with some chopped tomatoes, cilantro and Sriracha (optional but HIGHLY recommend).
