Wow this recipe is soo yummy and is incredibly easy to make. The sauce is luxurious and really transforms the taste of the chicken into something mildly sweet. The bright flavor of the lime cuts through the creaminess of the coconut milk. This recipe is perfect for week nights and meal prep. It can be paired with some brown rice or on top a bed of mixed greens.
Ingredients:
-2 lbs of chicken breast or boneless chicken thighs
-1 can of full fat coconut milk (you can use the light one if you’d like)
-the zest of one lime
-the juice of two limes (roughly about 3 tsp)
-1 tsp of salt
-1 tsp of black pepper
-1 tsp of red chilli powder
-1 tsp of minced garlic
-1 tsp of minced of ginger
-2 tsp of brown sugar
Directions:
1). Cut up your chicken into thin slices and mix all of the ingredients together.
2). Marinate your chicken for a minimum of 30 minutes to overnight (longer is always better).
3). In a medium non stick pan, cook the chicken in batches. When doing this, try to add as little of the marinate to the pan as possible. This will help the chicken brown vs steam.
4). Once you have cooked all of your chicken, place the marinate in the pan as well as the chicken and let the sauce thicken up.
5). After about 5 minutes, you’ll notice that the sauce will have thickened and will coat each piece of chicken. Enjoy 🙂
