This recipe is perfect for Summer when Plums are abundant and succulent. This BBQ sauce is tart, smoky and sweet. It is a fun recipe and I hope you’ll give it a try!
Yeilds: 4 Mason Jars
-1 Red Onion
-1 tsp Red Chili Powder
-2 tsp Salt
-2 tsp Black Pepper
-2 tsp Cumin
-2 tsp of minced Garlic
-1/2 cup of Brown Sugar
-1/2 cup of sugar
-1 cup of Ketchup
-1/4 cup of Apple Cider Vinegar
-2 tsp of Liquid Smoke
-20 pitted Plums
1). In a heavy bottom pan on medium high heat, add some oil and add your sliced red onions. Saute them until softened.
2). Once the onions have softened, add in the garlic and the spices and cook for 1 minute.
3). Then add the ketchup, brown sugar, apple cider vinegar and liquid smoke to the mixture and give it a good mix. Once everything has been mixed, add in your plums and cover your pot.
4). Lower the heat to medium and allow your sauce to cook for 20 minutes, stirring frequently.
5). After 20 minutes, your plums should have softened. At this point use an immersion blender and blend everything up until smooth. You can use a regular blender for this too but be careful and allow the steam to escape your blender continuously.
6). Taste your sauce adjust the seasonings in your sauce. If you would like your BBQ sauce to be sweeter then add more sugar. If you would like it to be more tangy, add more apple cider vinegar. If it feels like its missing some seasoning, add in more cumin and salt!
This will last in a fridge for a month. The high acidity of this BBQ sauce creates a more shelf stable BBQ sauce.
