These smashed potatoes are a jazzed up baked potatoes that have been baked with a spicy garlic sauce that brings these boring potatoes to life! This dish is perfect for entertaining and a great side dish to pair alongside a protein. It is a super easy recipe and pretty hands off. You can even boil the potatoes the night before and refrigerate them and then bake them off the next day! This recipe can be as healthy or as unhealthy as you’d like. When I am just making it for my family, I like to make this on the healthier side (with less oil) and less cheese. If you have been getting tired of eating “healthy” food, then I highly suggest you try this healthy recipe that is cost friendly and super delicious!
Ingredients:
-8 potatoes (any kind are fine for this recipe)
-4 tsp of garlic
-2 tablespoons of oil/ melted butter
-1 tsp of salt
-2 tsp of black pepper
-2 tsp of red chili powder
-1 tsp of smoked paprika
-1/4 cup of Monterey Jack cheese – You can use whatever cheese you have on hand or skip out if you want to keep this vegan!
-Possible Garnishes: cilantro, green onion, tomatoes. These aren’t necessary but the herbs definitely bring a delicious freshness to this dish.
Directions:
1). Cut your potatoes in half and place them in a large pot filled with salted water. Place a lid on this pot and bring this to a boil on medium high heat. Once it comes to a boil, turn the flame to medium and cook these potatoes until they are fork tender.
2). Preheat your oven to 350 degrees.
3). Place the potatoes on a foil/ parchment lined baking sheet and use the flat edge of a wooden spatula and press down on the potatoes until they are smashed. Like this:


4). Once you have smashed your potatoes, mix the oil/ melted butter and minced garlic. Split this mixture into two bowls and brush one bowls mixture (1/2 of the total) on to all of the potatoes.
5). Mix together the salt, black pepper, chili powder, smoked paprika in a bowl. Sprinkle 1/2 of this dry seasoning over the potatoes.
6). Place your tray in the oven for 15 minutes.
7). After 15 minutes, take out the tray and flip all of the potatoes over and repeat steps 4 & 5 on the other side of the potatoes.
8). Place in the oven for another 15 minutes.
9). After 15 minutes, add your cheese to your potatoes and place them in the oven for 5 minutes or until the cheese is melted.
