Kulfi is Pakistani Ice cream, it is flavored with cardamon and has a really nice caramelized milk flavor. This easy recipe doesn’t require many ingredients and is unlike the many others on the internet that require many hours to make. If you want to make some refreshing Kulfi’s for the hot summer days that are ahead, then definitely give these Kulfi’s a try!
Ingredients:
-8 cups of milk
-1 cup of dried milk
-7 tsp of sugar
-10 cardamon pods
-Cinnamon powder (optional)
-1 can on sweetened and condensed milk
Directions:
1). In a heavy bottom pan, mix the milk, dried milk and sweetened and condensed milk and set the flame to medium and allow the milk to come to a boil, stirring occasionally.
2). Once the milk comes to a boil, add the sugar, cardamon and cinnamon powder. Cinnamon powder is not traditional used in Kulfi but I love adding it for it’s warm flavor.
3). Set the timer for 30 minutes and stir occasionally. You’ll want to stir to the bottom of the pan to prevent your mixture from sticking to the bottom of the pan.
4). After 30 minutes, you’ll notice that the milk will have changed color and will have reduced significantly.
5).Take your pot off of the stove and allow it to cool to room temperature.
6). Once the mixture has cooled, use a strainer to fish out the cardamom pods and pour into Popsicle molds. If you do not have enough Popsicle molds, no worries! You can refrigerate the rest and place them into Popsicle molds after the first batch has been frozen. They from 6 to 8 hours to freeze.
7). Garnish with nuts if you’d like!
Notes:
If you do not have a Popsicle mold, you can simply pour your mixture into a dish and place it in the freezer. You can cut it into cubes and serve it that way or you can scoop it out just like ice cream!
-I use these Popsicle Molds, I love that they come with little baggies to store the Popsicle in. This definitely comes in handy if you’re planning on making a lot at once!
-If you have cardamon powder you can use that instead! I find that letting the whole cardamom pod infuses the milk mixture adequately enough so I just use the whole pod.
